Georgian winemaking is unimaginable without its easternmost region of Kakheti. Allegorically speaking, this land is a locomotive in terms of both the quantity and popularity of wines it produces, thus representing the face and example of Georgian winemaking.

Kakhetian wines, of course, are not all uniform and alike. In this region of Georgia, traditionally, kvevri technology has always been a dominant one. Today, in Kakheti, almost every single type and classification of wines are produced.

A traditional dry white Kakhetian wine (aged on chacha, of course) has a particularly rich aroma and is very diverse in terms of taste as well. As for the intensity and color of Kakhetian wines, the specialists still argue about them and the majority agrees that the classis kvevri wine cannot be called a classic white wine, but rather, it may be included into the new category of Orange Wines.

Kakheti is the main and the most important Georgian winemaking region and when we talk about wines produced here, we, of course, cannot omit the wines made in European style. The first Georgian made wine using European technology was the famous poet and public figure, Alexander Chavchavadze. His wine made in the village of Tsinandali was one of the most popular brands during imperial Russia.

As for the red wine called Saperavi, it has always been made dry and this tradition still continues. This is the principal Georgian brand and the famous experts from around the world show special respect towards this wine during tastings. Saperavi is rich in red fruit tones: cherry, black plum, etc. This wine cobines perfectly with Kakhetian pork barbecue – Mtsvadi.

Saperavi species of grapes are mainly used to make dry wines. The only exception is the brand called Akhasheni, the sweet version of Saperavi that first appeared during the Soviet Union. It was one of the most popular wines in the entire country and particularly in Russia. However, for the traditional Kakhetian winemaking, only dry wines are typical. As for sweet and semisweet wines, they are principally produced in western Georgia.
